This retro dish combines juicy mandarin oranges, pineapple chunks, shredded coconut, and soft marshmallows, all folded together in a creamy dressing. Ingredients (for 6-8 servings):

  • 1 can (15 oz) mandarin oranges, drained
  • 1 can (20 oz) pineapple chunks, drained
  • 1 cup marshmallows, miniature or regular
  • ¾ cup sweetened shredded coconut
  • ½ cup maraschino cherries, halved (optional)
  • 1 cup sour cream or Greek yogurt (or whipped cream for extra sweetness)
  • ¼ cup chopped pecans or walnuts (optional)

Instructions:

  1. In a large mixing bowl, add the mandarin oranges, pineapple chunks, mini marshmallows, coconut, and cherries if using. Gently toss to combine.
  2. Add the sour cream or yogurt to the bowl and gently fold until everything is well-coated, being careful not to break up the fruit.
  3. Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
  4. Before serving, sprinkle with chopped nuts if desired for added crunch and flavor. Serve cold.
