Oyster Stuffing

A coastal family favorite, oyster stuffing is a variation of traditional stuffing, bringing the briny richness of oysters to the Thanksgiving table. This savory dish combines fresh oysters with herbs, onions, celery, and hearty chunks of crusty bread, creating a stuffing that’s both flavorful and unique. The oysters add a subtle, delicate richness that pairs beautifully with the fragrant herbs and tender bread, resulting in a dish that’s moist, hearty, and full of coastal charm.

Ingredients (for 8-10 servings):

  • 1 lb crusty bread, cubed
  • 1 pint fresh oysters, drained and chopped
  • 4 tbsp unsalted butter
  • 1 large onion, finely chopped
  • 3 celery stalks, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh sage, chopped
  • ½ tsp fresh rosemary, chopped
  • 1 cup chicken or vegetable broth
  • Salt and pepper, to taste
  • Optional: 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 350°F (175°C). Spread the bread cubes on a baking sheet and toast for 10 min. or until lightly golden, then transfer to a large mixing bowl.
  2. In a large skillet, melt the butter over medium heat. Add the onion, celery, and garlic, cooking until softened, about 5 min. Stir in the thyme, sage, and rosemary, cooking for another 1-2 min. until fragrant.
  3. Add the sautéed vegetables, chopped oysters, and broth to the bowl with the bread cubes. Season with salt and pepper, then gently toss to combine. If the mixture seems dry, add a bit more broth.
  4. Transfer the mixture to a greased baking dish and cover with foil. Bake for 30 min., then remove the foil and bake for an additional 10-15 min. until the top is lightly browned and crisp.
  5. Garnish with fresh parsley, if desired, and serve warm.
