Ingredients (for 8 servings):

  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1/3 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3 tbsp all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 cups corn kernels (fresh or frozen, thawed if frozen)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 2-quart baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together melted butter, eggs, and sugar until smooth. Stir in milk and heavy cream.
  3. Sift in flour, baking powder, and salt, then stir until well combined.
