Ingredients (for 8 servings):
- 1/4 cup unsalted butter, melted
- 3 large eggs
- 1/3 cup granulated sugar
- 1 cup whole milk
- 1/2 cup heavy cream
- 3 tbsp all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3 cups corn kernels (fresh or frozen, thawed if frozen)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 2-quart baking dish with butter or non-stick spray.
- In a large mixing bowl, whisk together melted butter, eggs, and sugar until smooth. Stir in milk and heavy cream.
- Sift in flour, baking powder, and salt, then stir until well combined.
- Gently fold in the corn kernels until evenly distributed throughout the batter.
- Pour the mixture into the prepared baking dish. Bake for 45-50 min. or until the pudding is set and the top is golden brown. A toothpick inserted into the center should come out mostly clean.
- Let the corn pudding cool for 5-10 min. before serving. Scoop out portions and enjoy warm.
