Chicken and Rice Casserole

This chicken casserole is the ultimate comfort food—a creamy, hearty blend of tender chicken, fluffy rice, and a rich sauce, all baked together until bubbly and golden. Perfect for weeknight dinners or potlucks, this dish is easy to prepare and guaranteed to satisfy even the pickiest eaters.

Ingredients (for 4-6 servings):

  • 2 cups cooked white or brown rice
  • 2 cups cooked, shredded chicken (rotisserie works well)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • ½ cup crushed buttery crackers or breadcrumbs (optional, for topping)
  • 2 tbsp melted butter (for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish or similar casserole dish.
  2. In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  3. Add the cooked rice, shredded chicken, and half of the shredded cheese to the sauce. Mix well to combine. Spread the mixture evenly into the prepared baking dish.
  4. If using, combine the crushed crackers or breadcrumbs with the melted butter. Sprinkle this mixture evenly over the casserole, followed by the remaining cheese.
  5. Bake in the preheated oven for 25-30 min., or until the casserole is heated through and the top is golden and bubbly.
  6. Remove from the oven and let cool for 5 min. before serving. Enjoy warm, garnished with fresh parsley if desired.
