10 Easy Casseroles for a Last-Minute Dinner Party

Enchilada Casserole

A cheesy enchilada casserole is the ultimate Tex-Mex comfort food, featuring layers of soft tortillas, zesty enchilada sauce, gooey melted cheese, and your choice of seasoned chicken or beef. This easy-to-make, crowd-pleasing dish is perfect for a weeknight dinner or a festive gathering.  Serve it with a side of guacamole, sour cream, and a crisp salad for a complete meal that everyone will love.

Ingredients (for 6-8 servings):

  • 1 lb ground beef or shredded cooked chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 2 cups enchilada sauce
  • 12 small corn tortillas
  • 3 cups shredded Mexican cheese blend
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 2 tbsp chopped fresh cilantro (optional, for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. In a large skillet, cook the ground beef (if using) over medium heat until browned, breaking it into crumbles as it cooks. If using chicken, skip to the next step.
  3. Add the onion and garlic to the skillet and cook for 2-3 min., until fragrant and softened. Stir in the taco seasoning and 1/3 cup of the enchilada sauce. Mix in the black beans and corn.
  4. Spread a thin layer of enchilada sauce (about 1/3 cup) on the bottom of the prepared baking dish.
  5. Place a layer of tortillas over the sauce, overlapping slightly to cover the base.
  6. Spread half of the meat (or chicken) mixture over the tortillas, followed by a sprinkle of cheese.
  7. Repeat with another layer of tortillas, the remaining filling, and more cheese.
  8. Finish with a top layer of tortillas, the remaining enchilada sauce, and a generous sprinkle of cheese.
  9. Cover the dish with foil and bake for 20 min. Remove the foil and bake for an additional 10-15 min., until the cheese is melted and bubbly.
