Caprese Pasta Bake

Caprese pasta bake brings the iconic flavors of a Caprese salad into a warm, comforting casserole. This dish combines tender pasta, gooey mozzarella, sweet cherry tomatoes, fresh basil, and a hint of balsamic glaze for an elegant yet simple meal that’s perfect for weeknights or entertaining. Serve it with a side of crusty bread or a green salad for a well-rounded, crowd-pleasing meal.

Ingredients (for 6-8 servings):

  • 12 oz penne or rigatoni pasta
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella balls, halved
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • 1/2 cup fresh basil leaves, torn
  • Salt and black pepper, to taste
  • 2 tbsp balsamic glaze

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Bring a large pot of salted water to a boil and cook pasta until just al dente according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add cherry tomatoes, garlic, and red pepper flakes (if using). Sauté for 2-3 min. until the tomatoes begin to soften. Season with salt and black pepper.
  4. In a large bowl, combine the cooked pasta, marinara sauce, sautéed tomato mixture, half of the Parmesan cheese, and half of the basil leaves. Mix well.
  5. Transfer the mixture to the prepared baking dish. Top with the mozzarella balls and the remaining Parmesan cheese.
  6. Bake uncovered for 20-25 min. or until the cheese is melted and bubbling.
  7. Drizzle the baked pasta with balsamic glaze and garnish with the remaining fresh basil leaves.
