Caprese Pasta Bake
Caprese pasta bake brings the iconic flavors of a Caprese salad into a warm, comforting casserole. This dish combines tender pasta, gooey mozzarella, sweet cherry tomatoes, fresh basil, and a hint of balsamic glaze for an elegant yet simple meal that’s perfect for weeknights or entertaining. Serve it with a side of crusty bread or a green salad for a well-rounded, crowd-pleasing meal.
Ingredients (for 6-8 servings):
- 12 oz penne or rigatoni pasta
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella balls, halved
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- 1/2 cup fresh basil leaves, torn
- Salt and black pepper, to taste
- 2 tbsp balsamic glaze
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Bring a large pot of salted water to a boil and cook pasta until just al dente according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add cherry tomatoes, garlic, and red pepper flakes (if using). Sauté for 2-3 min. until the tomatoes begin to soften. Season with salt and black pepper.
- In a large bowl, combine the cooked pasta, marinara sauce, sautéed tomato mixture, half of the Parmesan cheese, and half of the basil leaves. Mix well.
- Transfer the mixture to the prepared baking dish. Top with the mozzarella balls and the remaining Parmesan cheese.
- Bake uncovered for 20-25 min. or until the cheese is melted and bubbling.
- Drizzle the baked pasta with balsamic glaze and garnish with the remaining fresh basil leaves.
