Cucumber Rolls

Cucumber rolls are a refreshing and elegant appetizer made with creamy soft cheese, savory salmon, crisp cucumbers, and delicate microgreens—ideal for making a big impression with minimal effort! These bite-sized rolls are perfect for holiday gatherings or any special occasion. For extra flair, drizzle a bit of honey or balsamic glaze over the rolls before serving.

Ingredients (for 16 rolls):

  • 2 large cucumbers
  • 6 oz soft cheese (cream cheese or goat cheese)
  • 4 oz salted salmon, thinly sliced
  • 1/4 cup microgreens (such as arugula or watercress)
  • 1 tbsp black sesame seeds
  • Toothpicks or cocktail skewers

Instructions:

  1. Using a mandoline or vegetable peeler, slice the cucumbers lengthwise into thin, even ribbons. Pat them dry with a paper towel to remove excess moisture.
  2. Lay a cucumber ribbon flat on a clean surface. Spread a thin, even layer of soft cheese along the entire length of the ribbon.
  3. Place a small strip of salted salmon and a pinch of microgreens at one end of the cucumber ribbon.
  4. Starting from the end with the salmon and microgreens, roll the cucumber tightly into a spiral. Secure the roll with a toothpick or cocktail skewer to hold its shape.
  5. Sprinkle the top of each roll with black sesame seeds for added flavor and a decorative touch.
  6. Arrange the rolls on a platter and refrigerate until ready to serve. Serve cold for the best flavor and texture.
