Ingredients (for 16 rolls):
2 large cucumbers
6 oz soft cheese (cream cheese or goat cheese)
4 oz salted salmon, thinly sliced
1/4 cup microgreens (such as arugula or watercress)
1 tbsp black sesame seeds
Toothpicks or cocktail skewers
Instructions:
Using a mandoline or vegetable peeler, slice the cucumbers lengthwise into thin, even ribbons. Pat them dry with a paper towel to remove excess moisture.
Lay a cucumber ribbon flat on a clean surface. Spread a thin, even layer of soft cheese along the entire length of the ribbon.
Place a small strip of salted salmon and a pinch of microgreens at one end of the cucumber ribbon.
Starting from the end with the salmon and microgreens, roll the cucumber tightly into a spiral. Secure the roll with a toothpick or cocktail skewer to hold its shape.
Sprinkle the top of each roll with black sesame seeds for added flavor and a decorative touch.
