Garlic Parmesan Potato Pieces

These golden, bite-sized potatoes are tossed in a heavenly blend of garlic, olive oil, and Parmesan cheese, then roasted to perfection. The simple ingredients come together to create a dish that’s bursting with flavor, making it a guaranteed hit at potlucks, dinner parties, or casual weeknight meals. Serve them warm, straight from the oven, for a side that’s as comforting as it is delicious. Whether paired with your favorite main dish or served as a party snack, they’re sure to leave everyone asking for seconds.

Ingredients (for 6 servings):

  • 2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, Parmesan cheese, Italian herbs (if using), salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut side down for optimal crispiness.
  4. Roast in the preheated oven for 25-30 min., or until the potatoes are golden brown and fork-tender. Flip them halfway through roasting to ensure even cooking.
  5. Once out of the oven, sprinkle the roasted potatoes with fresh parsley for a pop of color and added flavor.

Ingredients

  • 1/2 cup rice vinegar
  • 2 tbsp sugar
  • 2 cups cooked sushi rice
  • 1 cup soy sauce
  • 1/4 cup chopped cilantro
  • 2 tbsp seasame oil
  • 1 tsp chili paste
  • Salt
  • 1 mango, diced
  • 1 avocado, diced
  • 1 lb salmon, diced

Method

  1. Combine the rice vinegar and sugar.
  2. Stir though the cooked sushi rice, and with wet hands, shape into balls.
  3. Press the balls into ramekins lined with parchment paper, and press the rice up the sides of the ramekins into cup shapes.
  4. Refrigerate for 15 minutes.
  5. In the meantime, combine the soy sauce, cilantro, sesame oil, chili paste and salt in a bowl.
  6. Combine the mango, avocado and salmon.
  7. Pour the soy mixture over the salmon mixture, and stir through until evenly coated.
  8. Remove the rice cups from the refrigerator, and peel off the parchment paper.
  9. Distribute the salmon mixture between the rice cups.
  10. Garnish, serve and enjoy!
