Blueberry Cobbler

This refined sugar-free blueberry cobbler is a wholesome twist on the classic dessert. Juicy, naturally sweetened blueberries are topped with a buttery, golden biscuit layer that’s just the right amount of crisp and tender. Perfect for sharing at potlucks or enjoying as a weeknight treat, it’s a dessert that feels indulgent but stays mindful of natural ingredients.

Ingredients (for 6 servings):

For the Filling:

  • 4 cups fresh or frozen blueberries
  • 3 tbsp maple syrup or honey
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp lemon zest

For the Topping:

  • ½ cup whole wheat or spelt flour
  • ½ cup rolled oats
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • Pinch of salt
  • 3 tbsp coconut oil or unsalted butter, melted
  • ¼ cup unsweetened almond milk (or any milk of choice)
  • 2 tbsp maple syrup

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease ramekins, a baking dish, or a cast-iron skillet.
  2. In a mixing bowl, combine the blueberries, maple syrup, arrowroot powder, vanilla extract, and lemon zest. Stir to coat evenly, then pour into the prepared baking dish.
  3. In another bowl, whisk together the oats, flour, baking powder, baking soda, and salt. In a small bowl, mix the melted coconut oil, almond milk, and maple syrup. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Drop spoonfuls of the topping over the blueberry mixture, spreading it out slightly to cover most of the fruit.
  5. Bake for 25-30 min., or until the topping is golden brown and the filling is bubbling.
  6. Let the cobbler cool for 5-10 min. before serving. Enjoy warm on its own or with a dollop of unsweetened whipped cream or a scoop of vanilla coconut ice cream.
