Chicken Cobbler

A comforting casserole inspired by a TikTok trend, this dish combines rotisserie chicken, cream of chicken soup, frozen vegetables, and biscuit mix or bread of choice. Its quick prep and nostalgic flavor made it an internet sensation.

Ingredients (for 6 servings):

  • 3 cups rotisserie chicken, shredded
  • 2 cups frozen mixed vegetables (peas, carrots, and corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups biscuit mix or 1 can biscuit dough
  • 1 cup milk
  • ½ cup unsalted butter, melted

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. In the baking dish, mix the shredded chicken, frozen vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, and thyme. Season with salt and pepper. Spread the mixture evenly.
  3. In a medium bowl, whisk together the biscuit mix and milk until smooth. Pour the batter evenly over the chicken mixture, ensuring it covers the surface without stirring. Alternatively, place biscuit dough in a single layer of the chicken mixture.
  4. Drizzle the melted butter over the biscuit layer for a golden, flaky crust.
  5. Place the dish in the oven and bake for 35-40 min., or until the top is golden brown and the filling is bubbling around the edges.
  6. Let the cobbler cool for 5 min. before serving. Scoop into bowls and enjoy the creamy, comforting goodness.
