Turkey: Menemen

Menemen is a flavorful Turkish scrambled egg dish that’s especially popular for breakfast but also enjoyed as a light lunch or dinner on warm summer days. While it can be enhanced with Sucuk (spiced sausage), this recipe focuses on the classic vegetarian version.


Ingredients (serves 4):

  • 1 bunch of spring onions
  • 3 bell peppers
  • 14 oz diced tomatoes
  • 4 eggs
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Wash and finely chop the spring onions and sweet peppers.
  2. Heat a bit of olive oil in a frying pan. Add the spring onions and peppers, sautéing them briefly until fragrant.
  3. Stir in the diced tomatoes and let the mixture simmer for about 5 minutes, allowing the flavors to blend.
  4. Crack the eggs into the pan, season with salt and pepper, and stir gently. Cook until the eggs are fully set and combined with the vegetable mixture.

Tip: For a richer flavor, add some olives or crumbled feta cheese before serving.

Menemen is best served warm with freshly baked bread to scoop up the delicious mixture. Whether you’re starting your day or looking for a quick meal, this Turkish classic is sure to satisfy!

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
