Australia and New Zealand: Pavlova

Pavlova is a beloved dessert from both Australia and New Zealand, typically enjoyed during celebrations. This meringue-based dessert is light and crispy on the outside, with a soft, marshmallow-like inside. Topped with whipped cream and fresh fruit, it’s a refreshing and delicious treat.


Ingredients (serves 4):

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Fresh fruits for topping (e.g., kiwis, strawberries, passion fruit)

Instructions:

  1. Preheat your oven to 250°F . Line a baking sheet with parchment paper and draw a circle on the paper to guide the size of your Pavlova (about 7 inches in diameter).
  2. In a clean, dry bowl, whisk the egg whites on medium speed until stiff peaks form. Gradually add the sugar, one tablespoon at a time, while continuing to whisk until the mixture is glossy and smooth.
  3. Mix the cornstarch, vinegar, and vanilla extract in a small bowl and fold into the meringue mixture gently.
  4. Spoon the meringue onto the prepared baking sheet, following the circle as a guide. Create a slight indentation in the center to hold the toppings.
  5. Bake the Pavlova in the preheated oven for 1 hour. After baking, turn off the oven and leave the Pavlova inside with the door slightly ajar to cool completely (at least 1 hour).
  6. Once cooled, carefully transfer the Pavlova to a serving platter.
  7. Whip the heavy cream with the powdered sugar until soft peaks form. Spoon the whipped cream onto the Pavlova and top with fresh fruit.
  8. Serve immediately and enjoy the light, crisp, and refreshing treat!

Tip: For extra flavor, drizzle with passion fruit syrup or add a few mint leaves for garnish.

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
