Green pesto can be quickly and freshly prepared in a blender. The arugula used in this recipe can be substituted with wild garlic or kale, depending on your preference.
Ingredients (serves 4):
1/4 cup arugula
1 cup olive oil
1 tbsp parsley
1 clove garlic
Juice of 1 lemon
1 cup pine nuts
Salt and pepper to taste
Instructions:
Add the washed arugula to a blender or purée it with an immersion blender.
Add olive oil and parsley leaves (without stems). Peel the garlic clove, cut it into pieces, and add it to the arugula.
Squeeze the lemon and add the juice along with the pine nuts to the blender. Blend everything until smooth.
