Gazpacho

Gazpacho is a refreshing cold soup, perfect for hot days. Made with fresh vegetables, it's light, healthy, and easy to prepare.


Ingredients (serves 4):

  • 6 ripe tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 1 small red onion
  • 2 cloves garlic
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste
  • Optional: bread cubes or fresh herbs for garnish

Instructions:

  1. Wash and chop the tomatoes, cucumber, bell pepper, and onion. Peel the garlic cloves.
  2. Add all the vegetables to a blender, along with the tomato juice, olive oil, and red wine vinegar. Blend until smooth.
  3. Season with salt and pepper to taste. Blend briefly to combine.
  4. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  5. Serve cold, optionally garnished with bread cubes or fresh herbs.
