Horchata is a traditional and refreshing Spanish beverage with a rich history, perfect for cooling down on a warm day. This creamy, cinnamon-infused drink is easy to make at home and will transport your taste buds to sunny Spain or Latin America.
Ingredients (serves 4):
1 cup long-grain white rice
4 cups water
1 cinnamon stick
1 tsp vanilla extract
1/2 cup sugar
2 cups milk (or almond milk for a dairy-free option)
Ground cinnamon for garnish
Instructions:
Rinse the rice under cold water and drain.
In a blender, combine the rice, 2 cups of water, and the cinnamon stick. Blend until the rice and cinnamon are roughly ground.
Transfer the mixture to a large bowl and add the remaining 2 cups of water. Let it soak for at least 4 hours, or overnight for best results.
After soaking, blend the mixture again until smooth.
Strain the mixture through a fine mesh sieve or cheesecloth into a pitcher to remove the solids.
Stir in the vanilla extract, sugar, and milk until well combined.
Chill in the refrigerator for at least an hour before serving.
Serve over ice and garnish with a sprinkle of ground cinnamon. Enjoy!
