Red Pesto

Even better than tomato sauce is a pesto made from sun-dried tomatoes with the finest olive oil. Freshly prepared, it takes you straight to Italy. Who could resist that?


Ingredients (serves 4):

  • 1 clove garlic
  • 3.5 oz sun-dried tomatoes in oil
  • A handful of fresh basil
  • 1/3 cup pine nuts
  • 1/2 cup grated parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp tomato paste

 Instructions:

  1. Peel the garlic clove and add it to the blender. Add the sun-dried tomatoes with a little of their oil and blend briefly.
  2. Wash the basil and add it along with the remaining ingredients to the blender. Puree until smooth.
  3. Season with salt and pepper and serve with your choice of pasta.

Tip: Stored in an airtight container, the pesto will keep in the refrigerator for up to two weeks.
