Ingredients (serves 4):
For the Dough:
2 1/4 tsp active dry yeast
1 1/2 tsp sugar
1 1/4 cups warm water (110°F)
3 1/4 cups all-purpose flour
1/2 cup cornmeal
1/2 cup melted butter
1 tsp salt
For the Filling:
4 cups shredded mozzarella cheese
For the Sauce:
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 can (28 oz) crushed tomatoes
2 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional)
1 tsp sugar
For Assembly:
1/4 cup grated Parmesan cheese
2 tbsp melted butter (for brushing the crust)
Instructions:
In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for 5-10 minutes until frothy.
In a large mixing bowl, combine the flour, cornmeal, and salt. Make a well in the center and pour in the yeast mixture and melted butter. Mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
While the dough is rising, prepare the sauce. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, crushed red pepper flakes (if using), and sugar. Bring to a simmer and let cook for 20-30 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.
Preheat your oven to 425°F. Grease a 12-inch deep dish pizza pan or a cast-iron skillet with butter or oil.
Punch down the risen dough and transfer it to a floured surface. Roll it out into a large circle, about 14 inches in diameter. Carefully transfer the dough to the prepared pan, pressing it into the bottom and up the sides.
Layer the shredded mozzarella cheese evenly over the dough.
Pour the prepared tomato sauce over the cheese layer and spread it out evenly. Sprinkle the grated Parmesan cheese over the top of the sauce. Brush the exposed crust edges with melted butter.
Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is bubbling. Remove from the oven and let the pizza cool for a few minutes before slicing and serving.
