Lebanon: Shish Tawook (Chicken Skewers)
A Middle Eastern classic, Shish Tawook features tender, yogurt-marinated chicken grilled to smoky perfection. Infused with garlic, lemon, and warm spices, these juicy skewers are traditionally served with garlic sauce, pita bread, and fresh vegetables. Whether grilled over an open flame or on a stovetop, this dish is simple yet flavorful, making it an excellent romantic meal to enjoy together. Perfect for sharing straight off the skewer, it’s interactive and fun—especially when dipped in creamy garlic sauce!
Ingredients (for 4 servings):
For the Chicken:
- 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into chunks
- ½ cup plain yogurt
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp ground coriander
- ½ tsp cinnamon (optional)
- ½ tsp salt
- ½ tsp black pepper
For the Garlic Sauce:
- 4 cloves garlic, minced
- ½ tsp salt
- 1 tbsp lemon juice
- ½ cup neutral oil (such as sunflower or canola)
Instructions:
- In a bowl, mix yogurt, lemon juice, garlic, olive oil, and spices. Add chicken, coat well, and refrigerate for at least 1 hour (or overnight for best flavor).
- Blend garlic and salt until smooth. Slowly drizzle in oil while blending, then add lemon juice. Blend until thick and creamy.
- Thread the marinated chicken onto metal or soaked wooden skewers.
- Preheat a grill or grill pan to medium-high heat. Cook the skewers for 10-12 min., turning occasionally, until golden brown and cooked through.
- Garnish with fresh parsley and serve with garlic sauce, pita, and a crisp salad.
