Ingredients (for 2 servings):
2 (6 oz) filet mignon steaks (or your favorite cut)
8 large shrimp, peeled and deveined (or 2 small lobster tails)
1 tbsp olive oil
2 tbsp butter, divided
2 cloves garlic, minced
1 tsp fresh thyme or rosemary
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp smoked paprika (for shrimp)
1/4 tsp red pepper flakes (optional, for a spicy kick)
1 tbsp fresh lemon juice
Chopped parsley, for garnish
Instructions:
Pat the steaks dry and season both sides with salt and black pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 min. per side (for medium-rare), then reduce heat to low and add 1 tbsp butter, garlic, and thyme/rosemary. Spoon the melted butter over the steaks for 1-2 min. before transferring them to a plate to rest.
In the same pan, add the remaining 1 tbsp butter. Toss in the shrimp (or lobster tails) and season with smoked paprika, red pepper flakes, and salt. Cook for 2 min. per side (or until opaque and pink). Finish with lemon juice.
Arrange the steak and seafood on plates, garnished with chopped parsley. Serve with your favorite side, such as garlic mashed potatoes or roasted asparagus.
