Did you cook too much rice the day before? Then you can easily make a delicious rice stir-fry today, using up any leftover vegetables. Leeks and carrots are ideal, but you can throw in pretty much anything.
Ingredients (serves 2):
About 1 cup cooked rice from the day before
1 green onion
2 carrots
1/2 to 1 cup vegetables of your choice (e.g., peas, bell pepper, or broccoli)
2 eggs
1 tbsp soy sauce
Instructions:
Fry the cooked rice with a little oil in a pan.
Wash and chop the green onion, then add it to the pan.
Peel and wash the carrots and other vegetables, chop them, and add them to the pan.
Beat the two eggs and mix them well into the rice and vegetables.
When the eggs and rice start to get crispy, add a tablespoon of soy sauce for seasoning, fry for a short while longer, then serve.
