Broccoli Stem Soup

Don't let those broccoli stems go to waste! Often discarded, broccoli stems can be transformed into a delicious and nutritious soup. And if you have any leftover florets, they can be added too. This versatile recipe also works great with cauliflower, making it a perfect way to use up every part of your veggies and reduce food waste.

 

Ingredients (serves 2):

  • 1 onion
  • 1 stem of broccoli
  • 2 potatoes
  • 1/2 cup melting cheese or cream cheese
  • 2 cups vegetable broth
  • Some cooked broccoli florets (if any are left over)
  • Salt, pepper, and nutmeg for seasoning

Instructions:

  1. Peel and finely chop the onion and sauté it in a pot with a little fat.
  2. Remove the tough parts from the broccoli stem, cut it into pieces, and add to the onion.
  3. Peel and dice the potatoes and add them to the pot as well.
  4. Deglaze with the vegetable broth and let it simmer for half an hour.
  5. When the potatoes and broccoli are soft, puree the mixture with an immersion blender.
  6. Add the melting cheese or cream cheese, as well as any leftover broccoli florets.
  7. Season to taste with salt, pepper, and nutmeg.
