Rossini

The Rossini is a delightful and refreshing cocktail, perfect for brunches or festive occasions. It's a variation of the classic Bellini, using strawberries instead of peaches.

 

Ingredients (serve 2):

  • 1 cup fresh strawberries, hulled
  • 2 tsp sugar (optional, depending on the sweetness of the strawberries)
  • 1 cup Prosecco or any sparkling wine, chilled

Instructions:

  1. Puree the fresh strawberries in a blender or food processor until smooth. If desired, you can strain the puree through a fine mesh sieve to remove seeds for a smoother texture.
  2. Taste the strawberry puree and add sugar if needed, blending again to combine.
  3. Divide the strawberry puree equally between two chilled champagne flutes, filling each about 1/3 of the way.
  4. Slowly top up each glass with chilled Prosecco or sparkling wine, gently stirring to combine the puree with the wine.
  5. Serve immediately and enjoy!

Tip: For a more elegant presentation, garnish each cocktail with a small whole strawberry on the rim of the glass or a sprig of mint.
