Mini Quesadillas

Bite-sized, crispy, and packed with flavor, these mini chicken quesadillas are the perfect handheld snack for game day. Filled with seasoned shredded chicken, melty cheese, and just the right amount of crunch, they pair perfectly with salsa and guacamole for dipping.

Ingredients (for 12 quesadillas):

  • 6 small flour tortillas
  • 1 cup cooked, shredded chicken
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tbsp chopped fresh cilantro (optional)
  • Cooking spray or butter for frying
  • Salsa and guacamole, for serving

Instructions:

  1. In a bowl, mix shredded chicken with cumin, garlic powder, smoked paprika, and cilantro.
  2. Cut the tortillas in half and place a small amount of chicken and cheese on one side of each half. Fold over to form mini quesadillas.
  3. Heat a skillet over medium heat and lightly coat with cooking spray or butter.
  4. Cook quesadillas for 2-3 min. per side, until golden brown and crispy.
  5. Serve warm with salsa and guacamole on the side.
