Soft, golden pretzel bites with a chewy texture and just the right amount of salt, served with a rich and creamy beer cheese dip. Ingredients (for about 30 bites):
For the Pretzel Bites:
1 ½ cups warm water
2 ¼ tsp active dry yeast
1 tbsp sugar
4 cups all-purpose flour
2 tsp salt
¼ cup baking soda (for boiling)
1 egg, beaten (for egg wash)
Coarse salt, for sprinkling
For the Dip:
2 tbsp butter
2 tbsp flour
½ cup beer (lager or ale)
¾ cup milk
2 cups shredded cheddar cheese
½ tsp garlic powder
½ tsp mustard powder
Salt and pepper, to taste
Instructions:
In a bowl, combine warm water, yeast, and sugar. Let sit for 5 min until foamy.
Add flour and salt, mixing until a dough forms. Knead for 5 min, then let rise for 1 hour.
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Divide dough into small pieces and roll into bite-sized balls.
Bring a pot of water to a boil, then add baking soda. Boil pretzel bites for 30 sec, then transfer to the baking sheet.
Brush with egg wash, sprinkle with salt, and bake for 12-15 min. until golden brown.
Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 min.
Slowly add beer and milk, whisking until smooth. Stir in cheese, garlic powder, and mustard powder. Cook until melted and creamy.
Serve pretzel bites warm with beer cheese dip or classic mustard.
