If your recipe requires heavy cream, replace 1 cup cream with 3/4 cup milk + 1/3 cup melted butter. For light cream, use a bit more milk and less butter. In cakes, you can replace cream altogether with  sour cream, yogurt, ricotta, mascarpone or cream cheese.
