For a little exotic flavor on your plate, try this delicious Middle-Eastern specialty. Combine 1 pound ground lamb with 1 finely chopped red onion, 10 mint leaves, a dash of paprika and a pinch of ras el hanout (a North African spice mix). Form the mixture into 4 burgers. Cook each burger in a buttered skillet for 2 minutes on each side or until desired doneness. Spread some hummus onto the inside of a fresh pita bread. Add the meat, with lettuce and tomato. Serve immediately.
