Potato salad is usually a mayonnaise-laden side for cookouts or chicken dinners, but you can turn it into a healthy main by adding eggs and subbing vinaigrette for the mayo! Simply boil finely chopped potatoes in a large volume of salted water on the stove, then let cool.
