Goat's cheese

Tangy, soft goat cheese goes wonderfully with chicken or veal burgers.

How to assemble: bottom bun, tomato slices, lettuce, a few thin slices of goat cheese, chicken breast or veal patty, sauteed onions, top bun.

Tip: If serving with fries, make an easy goat cheese sauce for dipping. Process 1/2 a log of goat cheese, and add 3 tablespoons sour cream. Heat in a saucepan on low, then season with salt and pepper to taste. Garnish with chiseled chives.
