Moroccan-spiced roasted chickpeas

Roasted chickpeas are a satisfying alternative to greasy chips and overly processed snacks. Bulk up your buffet with this exotic version that calls for a unique Moroccan spice mix that's easy to make at home. Preheat the oven to 350 °F. Drain and rinse 1 can chickpeas (or garbanzo beans). For the spice mix, combine 2 teaspoons ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon sweet paprika, 1/4 teaspoon ground allspice, 1/2 teaspoon ground cinnamon, 1/2 teaspoon chili powder, 1/4 teaspoon ground ginger, 1/8 teaspoon cayenne pepper and 1 pinch ground cloves. Toss beans with spice mix, 1 tablespoon olive oil and a bit of salt to taste. Pour the beans onto a baking sheet, and arrange in a single layer. Roast for 40-50 minutes until lightly browned. Serve immediately.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
