Shrimp tempura

Shrimp tempura is traditionally a Japanese recipe that is more or less a fancy way of saying fried shrimp. It's easy to replicate at home and makes for a fantastic finger food addition to your game-day spread. For the batter, combine 1 1/2 cups flour with 3/4 cup cornstarch, 4 1/2 teaspoons baking powder and 2 teaspoons curry powder. Mix well. Take 1 pound peeled and deveined shrimp and dip it in the mixture, turning to coat. Shake off excess, if necessary, and set aside. Add 12 ounces cold carbonated water to the leftover tempura mixture, and whisk well to turn it into a batter. Season with salt and pepper to taste. Thread 4 lightly coated shrimp onto 1 bamboo skewer and continue until shrimp are all used up. Dredge the shrimp in the tempura batter, and fry until golden brown. Drain on paper towels before serving with shrimp cocktail sauce on the side.

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
