Gumbo

This comforting dish, native to Southern Louisiana and now commonly associated with New Orleans, traditionally consists of chopped chicken, celery, bell peppers, onions, shrimp and spicy sausage simmered in stock and an added thickener. Spices are essential, and applied depending on the style (Creole or Cajun). Spooned onto a bowl of steamed white rice, this is one Southern specialty  you can't pass up.
