For this satisfyingly tender and flavorful centerpiece, slice 5 ounces button mushrooms and place in a bowl, along with 1 can drained sliced chestnuts. Blend half of the mixture. Add a dash of Cayenne pepper and 2 heaping tablespoons cream cheese. Mix well and stuff the inside of the chicken and under the skin with the preparation. Drizzle with olive oil.
