Potato gratins are a family favorite and a good alternative to roasted potatoes. The best part is you can cook them in advance to concentrate on the rest of your holiday menu. Slice 1 ounce potatoes, placing the slices in a bowl of cold water to prevent browning. Rinse and pat dry with paper towels. In a large saucepan, combine 1 cup heavy cream, 1/3 cup milk and 1 crushed garlic clove. Bring to a gentle simmer. Add the potatoes, cover and simmer for 10 minutes. Season and transfer to a buttered baking dish. Sprinkle with 1/2 cup grated cheese and bake at 350 °F for 25 minutes until golden.
