Salmon with Sorrel sauce

For the sauce, brown 2 minced shallots in a pan with 2 tablespoons butter. Add 1 bunch finely chopped sorrel and cook for 5 minutes. Add 1/4 cup white wine, let reduce, then add 2/3 cup heavy cream and simmer over low heat. Pan-fry your salmon steaks, and coat with the creamy sorrel sauce to serve.
