Microwave meringues

This quick version of meringues is just as tasty as the real deal. Sift 2 and 1/3 cups powdered sugar over 1 lightly beaten egg white. Stir until the mixture becomes a thick, pliable icing and roll into balls. Line a plate with parchment paper. Put 3 balls at a time on the plate and microwave them on high for 1 1/2 minutes until the balls balloon and puff into meringues. When they are cool, serve the meringues with sliced tropical fruit.
