The great thing about zucchini is that there are very few wrong ways to serve it. It's one of the most versatile vegetables out there and one of the best ingredients to use for healthy, alternative recipes. You can spiralize or slice them to make zucchini noodles, hollow them out to make zucchini pizza boats, slice and saute them, roast them, add them to soups, slice them lengthwise and use to make rolled appetizers, etc. If you're going to make zucchini noodles, however, you should remember to drain the water first, then give them a quick saute or boil before plating. Or you can use them for cold noodle salads.
