This rich cream pastry cake, named after the patron saint of French pastry chefs, is made of puff pastry, choux pastry, creme chiboust (ie. pastry cream lightened up with stiff egg whites or whipped cream), and garnished with cream puffs. It's said to have been created in the 19th century by pastry chef M. Chiboust who owned his own shop on the rue Saint-Honoré in Paris.
