Sernik - Poland

Sernik is traditional Polish cheesecake that uses twarog, a curd-like cheese, to get its signature fluffy texture and rich flavor. This fruity version is made with a crust of crushed semi-sweet digestive biscuits (you can try subbing graham crackers, although taste and texture aren't exactly the same) and a sweet cranberry jelly topping. If you can't find twarog, try subbing cottage cheese. Simple indulgence at its best!
