Mediterranean Couscous Salad

Couscous makes an ideal base for college cooking because it's easy to whip up and all you need is some boiling water (from a kettle or the microwave) and a large bowl to let it steep in.  This flavorful Mediterranean couscous salad adds a lemony vinaigrette, artichoke hearts, olives, cherry tomatoes, and fresh herbs for a delicious, healthy salad that's not short on flavor.  We wouldn't say no to a few crumbles of feta or a few slices of rotisserie chicken on top, too!
