Not reserving some add-ins for the end

The defining features of chocolate chip cookies is that each cookie is evenly peppered with perfect morsels of chocolate, so that final bit of dough in the bowl that's often 99% cookie, 1% chocolate just isn't going to cut it.  Make sure those last few cookies don't get the short end of the stick by reserving some add-ins until you're nearly through portioning out the dough.  This is true not only for chocolate chips, but also any other delicious things you might want to fold into your dough, like pieces of toffee, chunks of your favorite candy bar, or lavender buds, like in this creative recipe.
