My onions are sprouting… can I still eat them?

Yes

The sprouts are safe AND edible. In fact, the green sprouts make good substitute for scallions.  However, if you find that they are a little wilted, cook them before using them.

We recommend putting a smaller sprouted onion in water to keep the roots growing.

To store onions optimally:

 Store in a cool, dark, dry place.

Avoid sealed bags-- they need air circulation. Try a mesh bag, a cardboard box with holes, or even cut small holes in a paper bag.
