This ultra easy stuffing with cranberries and goji berries lends a modern new lease on life to tired old Thanksgiving birds. Melt 1 cup butter over medium heat. Cook 1 1/2 cups finely chopped celery and 3/4 cup finely chopped onion in the butter, stirring frequently, until the onion is tender. Stir in about 3 cups of breadcrumbs, then transfer to a large bowl. Soak 1/2 cup dried goji berries and 1/4 cup dried cranberries for 5 minutes and drain. Add to the mixture along with another 2 cups breadcrumbs, 2 tablespoons chopped fresh sage, 1 tablespoon chopped fresh thyme, salt and pepper. Mix well.
