Hainanese Chicken Rice (Singapore)

This delicious chicken dish, considered one of Singapore's national dishes, has its origins in the Hainan province of southern China. It is made by poaching a whole chicken with the skin on, stuffed with ginger and green onions, at temperatures just below boiling (in other words, at a nice simmer). Served with rice that's been cooked in the broth, with chili and soy condiments on the side, this chicken is one of the tastiest you'll ever try (thanks especially to the gelatinous layer of fat between the skin and the meat, formed during the cooking process).
