The "Donkey burger" is considered native to the cities of Baoding and Hejian, though it can be found in other parts of the country as a popular street food. The meat really is donkey meat, which is chopped or shredded, then stuffed into a roasted,  slightly flaky bread pocket known as a shao bing and garnished with green pepper or cilantro leaves.
