Spicy black eyed peas and fried plantains make up this popular Ghanaian dish that's commonly sold by street vendors throughout the country. Its name comes from the red palm oil used to prepare it (sometimes also with the addition of tomatoes), and the peas are cooked into a fine bean curry that often includes fish, scotch bonnet and onions.
