On cleaning and selecting mushrooms: "You wash them very shortly in cold water, take them out and dry them off right away. The most important thing, when you go out and buy mushrooms, be sure when you buy them that they are closed on the bottom. Once they open up, they soak up all the water, and they are not tasty anymore. The mushrooms should be nice and white and have a good, firm touch to it. You don't want when they are soft; it means they are old."
