Golden Fried Shrimp Poor Booy - Parkway Bakery & Tavern (Louisiana)

Technically speaking, po' boys are not designated sub sandwiches, but we like to think of them as a Louisiana-made subbreed, as they resemble them in pretty much every way, save for a preference of fried seafood fillings or sloppy roast beef. Parkway Bakery & Tavern in New Orleans has been serving up these specialty sandwiches since 1911, and their classic shrimp variation is a special treat: golden fried Louisiana wild caught gulf shrimp stuffed into a sliced French baguette and accompanied by the requisite fixings (lettuce, tomato, pickles and mayo).
