Thai Red Curry Cauliflower

Healthy, satisfying, and full of flavor, this Thai-inspired curry dish is complex enough to impress adventurous eaters, but not risky enough to lose interest from the pickier ones at the table. And because it's made with cauliflower and veggies instead of a meat base, it takes less time than many other curry recipes and can be prepped and ready in under a half hour.
