It's certainly not lacking variety or quality, and if you're in the mood for some upscale modern Chinese fare, then you should reserve a table at Blossom. Housed in the luxurious ARIA resort and casino hotel, Blossom offers up 100 Beijing and Hong Kong dishes from chef Chi Kwun Choi. Some of the choices are prepared table side, including the carving of a whole peking duck. Expect to fork out a bit more than you're used to, but also remember, you're in Vegas.
