Consider the cheese carefully

When it comes to mac and cheese, the more cheese the better, right? Wrong.
Overdoing it with too many different strong-flavored cheeses can make your dish overpowering and far from the delicious but mild-flavored comfort food you’re looking for.
Start with a base of American cheese, which will melt beautifully and evenly, then include one high-profile cheese like sharp cheddar, Parmesan, or Gruyere… but not all of them.
One more thing: shred your own cheese! Pre-shredded bagged cheese is full of stabilizers and is much drier too.
